Add the egg and vanilla extract. Mix well. In another bowl, combine flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and mix until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes. Roll out the dough on a floured surface and cut using the cookie cutter.
